As I wrote in my post yesterday, I have joined a CSA this summer. Right now I have lots of zucchini. To do something different with it, I decided to peel it and make it into “pasta”. I just peeled it down to the seeds and put it into a bowl. It was ribbon “pasta”.
I heated my Cutco frypan and put garlic olive oil into it. I sautéed the zucchini lightly till soft and thoroughly heated. Then put it into a bowl. Now, I did use canned diced tomatoes already seasoned. I placed the tomatoes in the same pan and heated them.
After the tomatoes were heated, I I put the zucchini noodles back in for a few minutes. Heated thoroughly. Topped with parmesan cheese and enjoyed!! It was delish. Love cooking, which I thought I never would!
